Hi everyone! I’m sharing a super quick recipe with you all today. My avocado sauce takes 2 minutes to make in the blender, and is my absolute favorite thing to meal prep because I use it for everything and anything.
I post about this avocado sauce all the time on my instagram, and always get messages and questions, so figured it's about time to document it on the blog. My go to things to use it for are salad dressing, to dip veggies in (air fryer veggie chips!), & a sandwich spread. It's pretty much always in my hearty salad & buddha bowls I've been making for lunches nonstop during quarantine. It's gluten free, dairy free, egg-free, paleo, vegan... you name it.
I'm all about cooking clean and - more importantly - simple. The easier, the better. This only requires 4 main ingredients + whatever seasoning you like or have on hand. I make this at the beginning of every week to use throughout!
1/2 olive oil
1/2 cup almond or coconut milk - feel free to add more milk or water to find your preferred consistency
1/2 tsp of lemon or lime juice (to prevent the avo from browning throughout the week)
Your spices of choice (I like garlic, salt & pepper!)
Put all the ingredients in a blender (I use this nutribullet), and blend! Done and done.
I store it in a glass jar in the refrigerator (leftover from pasta sauce, or peanut butter.) It can stay good up to a week.
