no-bake energy balls


My friend Kristyn starting making these energy balls that are peanut butter based, for a healthy protein snack and energy boost. I loved the recipe and started making them myself now too! I gave up caffeine at work, so they’ve been awesome to help the mid-morning or mid-afternoon sleepiness at work, as protein is a great source of energy. Each ball is 144 calories and fills you up - the perfect hold over until lunch or dinner.

Made up of peanut butter and chia seeds and dates, you’re getting a ton of protein. By adding dates for a source of sugar and sweetness, instead of something like honey or pure sugar, you’re also receiving a ton of other health benefits. Essential minerals such as calcium, iron, phosphorus, sodium, potassium, magnesium and zinc are found in dates, as well as vitamins like thiamin, riboflavin, niacin, folate, vitamin A and vitamin K. This recipe only takes 5 minutes max. to make, and your snacks for the whole week are prepped - done and done! They're also great for traveling, since you don't need to refridgerate them.

RECIPE

Makes ~8 energy balls

  • 12 dates, chopped

  • 3 tbsp peanut butter or almond butter

  • 1/4 cup chia seeds

  • 2/3 cup oats

INSTRUCTIONS

  1. Mix all the ingredients in a mixing bowl

  2. Use your palms to roll the mixture into 1” spheres

  3. Place on a plate or cookie sheet and leave in the refrigerator for 15 minutes so they will firm up

  4. Eat your heart out!
