Joe and I have recently began using our crockpot more, and I had forgot how much I loved cooking in my slow cooker! It's the best thing ever to come home with dinner ready. Our newest favorite is no carb (minus the chips!) crockpot chicken fajitas. YUM.
This recipe serves 4-5, so we often half it.
-2 lb boneless chicken breast
-4 cloves minced garlic
-1 (14.5 oz) can of petite diced tomatoes with green chiles
-1 red, 1 orange, and 1 green bell pepper, julienned
-1 large yellow onion, julienned
-2.5 tsp chili powder
-2 tsp ground cumin
-1 tsp paprika
-1 tsp salt
-1 tsp pepper
-2 tbsp lime juice
-1 tbsp honey
Optional for serving: avocado or guac, cheese, chips, sour cream, cilantro, flour tortillas, etc.
-Put half of the can of petite diced tomatoes at the bottom of the crock pot. Spread into an even layer.
-Top with half of the peppers and onion
-In a bowl, whisk together the chili powder, garlic, cumin, paprika, salt and pepper.
-Dip the chicken in the spice bowl and lather both sides with spices.
-Place the chicken as the next layer in the crockpot.
-Top with the remaining half of the tomatoes, then sprinkle with the remaining peppers and onions.
-Cook on low for 6-8 hours, or high for 3-4 hours.
